Minty mint goodness
Jul. 2nd, 2008 06:15 pmSecanjabin production is cranking along. I surveyed the stash:
Spearmint/white vinegar - 1 liter
Curly mint/balsamic vinegar - 4.5 liters
Oregano/white vinegar - 7 liters
Chocolate mint/balsamic vinegar - 7 liters
Apple mint/cider vinegar/candied ginger - 1.5 liters
Apple mint/balsamic vinegar - 17 liters
Strawberries/balsamic vinegar - 6 liters
Ginger - about a pint from at least two years ago
Apple mint/red wine vinegar - 1.75 liters
Lemon balm/white vinegar - 1 liter
Apple mint/cider vinegar - 28 liters
Apple mint/white vinegar - 4 liters (but reduced -- it should be 5 liters)
total, about 79 liters, or most of 21 gallons.
I'm not done yet. I figure on making perhaps another 20 or 30 liters before Pennsic.
Update (I *hate* "ETA" -- it overloads a well-known acronym to no useful end):
The quantity on hand (which doesn't include stuff consumed or given away) amounts to 16 quadruple batches.
128 pounds of sugar
20 gallons of water
8 gallons of vinegar
The liquid volume reduces by about a quarter in the making, assuming that the sugar doesn't add volume.

Sell some.
The stuff keeps well.
As to February, I just got some of the files for the web. They should be up within the hour.
