I've wanted to. Now, now that I see these things are a reality being enjoyed by people I know, I may just have to venture forth.
The bacon mat didn't hold together quite as well as I'd hoped. I don't know if that was from the pool of rendered fat it fried in, or because I didn't let it bake as long as I should have.
I was thinking of cooking the next one on a rack to keep it out of the grease.
I used the sheet of aluminum foil that I wove it on as a rolling accessory (much as the doohickey used for sushi rolls). Something a bit less conductive might have helped, such as a silicone sheet or the like. I used thick cut bacon; thinner might have helped. The roll was a bit bulky.
That looks SO yummy. Especially when I contemplate making something like it with the bacon we can get at the local butcher, which is The Best Bacon Ever (tm) in my book.
